Arlene's Lumpia
Arlene Granada Lepper '72 -
1 package ground chicken or turkey 
bean sprouts 
1 package of cole slaw 
cut cabbage 
1/2 package french cut green beans 
chopped chestnuts
soy sauce pepper garlic 
1 package SPRING roll wrappers

Brown the meat.  Add the chopped chestnuts.  Add the frozen green beans. Add the rest of the vegetables.  Season and finish stir frying till done but not limp or soggy.  Place on wrappers and roll tight!  (The tighter the roll, the crispier the lumpia.)  Deep fry till golden brown over medium heat.

Jo Evans' Lumpia
Jo Evans '85 - 
1lb ground pork 
1/2 LB crab meat (I use imitation :-)) 
bunch chopped green onions 
3-4 carrots, grated 
1 egg 
garlic pepper

roll in lumpia wrappers... also, I cook the meat after they have been rolled

O.K. people,
My recipe is filipino style in that i don't measure, I use TLAR (That Looks About Right).  I use regular bananas for the sweetness.  Slice lengthwise.  Roll in a mixture of brown sugar and cinnamon.  Put thin slice of jackfruit on mixture (nangka, langka, it's all the same).  Roll tightly in lumpia wrapper and deep fry till golden brown over medium heat.   Don't use bananas that are too ripe or else they get soggy.

Jenny's Lumpia

1 pd raw ground beef (or ground pork)
1 small can minced shrimp
4 gloves garlic, minced
4 green onions, minced
4 carrots, cut in itty bitty peaces
1/2 tsp salt
1/4 tsp fresh pepper

Add ingredients together, mix well.  Portion onto lumpia wrappers and wrap  <I do easy triangles..btw, wet two sides of wrapper to make a better seal>.
 Fry at med/high heat until brown.

Sauce to dip lumpia in
Soy Sauce
Vinager
2 garlic cloves, diced
1/8 tsp fresh pepper

Now don't you dare tell anyone I was domestic! :)

Vegetable Lumpia Sauce
There are 2 types that I use 1st one I use it mainly with the veggie type of lumpia but also can be used with the little rolls (shanghai)

...Garlic (minced) ...Vinegar ...Dab of soy sauce ...ground black pepper or ground white pepper All you do is mix everything up in a bowl and dip the lumpia in it.

Thai or Nuoe Cham Ga Lumpia Sauce
2nd one is thai style; if you have an oriental grocery store around your place you can get it already made in a bottle its called sweet chili sauce (Nuoe Cham ga)usually used for dipping chicken or spring rolls. Its sweet and spicy (not too spicy) If you want to make it from scratch heres what you need: Vinegar red chilli sugar (brown or white) a little salt karo syrup about 1 table spoon tsp of orange and/or lemon rhine

heat vinegar, karo syrup and about 1tbsp h20 and bring to boil then add the rest of the ingredients and let cool down/just add a little more of the ingredients according to taste.

Well enjoy because its very masarap!!!!;-)
